This is one of our go-to autumn favourites. Our harvest vegetable stew combines a selection of seasonal vegetables – think sweet potatoes, carrots, and parsnips – for a thick, filling stew that’s both nourishing and easy to prepare.

What you’ll need:

  • 2 carrots, diced
  • 1 sweet potato, cubed
  • 1 parsnip, cubed
  • 1 leek, sliced
  • 1 can of white beans (cannellini or butter beans)
  • 4 cups vegetable broth
  • 2 cups chopped kale or spinach
  • Fresh rosemary and thyme
  • Salt and pepper to taste

Instructions:

  1. Start by gently sautéing the carrots, sweet potato, parsnip, and leek in a large pot with a dash of olive oil until they soften slightly.
  2. Add the vegetable broth, beans, rosemary, thyme, salt, and pepper, then bring to a boil.

3. Creamy Pumpkin and Lentil Curry 

Pumpkin is one of autumn’s gifts, and this creamy curry makes the most of it. This comforting dish is plant-based, protein-packed, and incredibly easy to make. The warm spices pair perfectly with the natural sweetness of pumpkin, creating a meal that’s both filling and full of flavour.

Ingredients:

  • 1 small pumpkin or butternut squash, cubed
  • 1 cup red lentils, rinsed
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 onion, diced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • Fresh coriander for garnish

Instructions:
